1966: The Birth of the Recipe
My grandmother, Nonna Lorenza, invents a new recipe for a flatbread, inspired by her mother in law.
1987-2024: All eyes on Leonessa
Nonna Lorenza decides to open a small restaurant on top of a hill in Saltara, Italy. The place quickly rises to fame, selling nearly 1,000,000 crescias over a few decades!
2025: The Shutdown...
Unfortunately, in early 2025, a government error forces my nonna to shut the restaurant down and abandon forever her dreams.
2025: The Legacy Lives On
Today, I committed to continue her legacy through Leonessa (“lioness,” named after my powerful Nonna), sharing her unique flatbread with the whole world.

For many reasons! Here are some of the main ones:
- Seed oils are processed with heat and chemical substances that damage the fats, so by the time they reach your plate, they already contain harmful byproducts.
- They are unstable, which means they break down even further during cooking.
- They are rich in omega-6 fats, which can make you feel sluggish and may promote a state where weight and health problems can easily develop.
- Unlike ancestral fats like butter, lard, or olive oil (which truly nourish and satiate you), seed oils have little nutritional value and push you to eat more without ever feeling genuinely full.

Leonessa Piadina is made only with natural ingredients, which is why it must be kept in the fridge and consumed within 30 days.
Most flours come from wheat that’s treated with pesticides.
Organic flour, like the one we use, is healthier because it’s cleaner, less chemically treated, and free of additives that conventional flour often contains.
Leonessa has a calorie content similar to other flatbreads, but the difference is in the quality of the ingredients.
When fats come from seed oils or preservatives are added, you tend to eat much more before feeling full, because these ingredients irritate the gut and confuse your hunger signals.
Real fats, like butter and lard, do the opposite: they nourish and satisfy you, so you naturally stop eating when your body has had enough.

Leonessa Piadina is handmade (yes, every single one!) with organic ingredients, and the preparation takes at least 4 hours from start to finish.
